Generally, you should not be worrying about the processor type. For some time now all Pocket PC devices use ARM processors only and all programs are optimized for them only.
Many sites still support the other two alternatives, which are MIPS and SH3/SH4, but ARM is the wide standard now.
XScale is a generation of ARM.
